Alice's Oyster Casserole

Leavins Seafood, a wholesale company that harvests and packages oysters, has been operating in Apalachicola, Florida, for 39 years. In 1972, owners Grady and Alice Leavins decided to turn their weekend passion of oystering into a full-time business. Here, “Miss Alice” shares her recipe for oyster casserole.

2 Tbsp butter
1 pint oysters, drained
1 cup half and half
1 tube of Saltine crackers
1/2 cup shredded cheddar cheese

Preheat oven to 400 degrees. Simmer oysters in butter until the oysters curl. Add the half and half, and remove from heat. Crumble the tube of saltine crackers, and add to the butter and oyster mixture. Set aside. Spray an 8×8 casserole dish with nonstick cooking spray. Spread oyster mixture into pan, and sprinkle the top with shredded cheddar cheese. Bake in a 400-degree oven for 12-15 minutes.
