Apple Bread

applebread1/2 cup oil
2 eggs
1 cup sugar
1 1/2 cups all-purpose flour
1/2 tsp. bak­ing soda
1 1/2 cups apples, peeled and diced
1/4 tsp. salt
1/2 cup walnuts, chopped
1 tsp. vanilla
1/2 tsp. cin­na­mon
1/2 tsp. nutmeg

Mix first three ingre­di­ents together. Add remain­ing ingre­di­ents, leaving a few walnuts to sprinkle on top, and mix. Pour into greased and floured 8×4 pan. Bake at 300 degrees for 1 1/2 hours. Cool for 10 minutes. Remove from pan. Cool on rack.

This recipe can also be baked as muffins and frozen.
