Main Street Meats Country Breakfast Sausage
3 lbs. *ground pork
1 Tbsp. salt
1 Tbsp. black pepper, ground
1 Tbsp. dried sage
1/2 Tbsp. red pepper flakes
*Ask your butcher to grind the pork for you.
Mix together the ground pork with the spices. For patties, portion the sausage into 2-4 oz. balls. For immediate use, flatten each patty and cook in a cast iron skillet on medium heat for about 3-4 minutes on each side until well done. If all of the sausage will not be eaten in the next few days, freeze individually on a tray in the freezer, then package in a freezer bag until needed.
