Texas Peach Salsa

While working at Austin’s Sustainable Food Center, Texas resident Lindsey Ripley created several Southern-inspired recipes now featured in SFC’s The Happy Kitchen Cookbook. Her Texas Peach Salsa has a smooth, mild flavor and is slightly sweet, making it a perfect complement to salty tortilla chips.

4 cups peaches, diced
1 jalapeno pepper, minced
1 tomato, diced
2 Tbsp. white wine vinegar
1 Tbsp. honey
1/2 red onion, diced
Juice of 1 lime
Salt (optional)

Remove pit from peaches, cut fruit into very small cubes and place in a bowl. Remove seeds and membranes from jalapeno and mince. Add jalapeno, tomato and onions to peaches. Add all liquid ingredients to peaches. Stir and add a pinch of salt if desired.
