With the exceptional taste of green tomatoes, Atlanta’s Doux South Pickles created a sharp addition to their line of pickles with Mean Green Tomato. The vigor of vinegar enhances the taste of green tomatoes that comes in large thick slices and is a perfect ingredient for the zest of spring.
These artisan pickles were created by Southern Chef Nick Melvin, who offers plenty of recipes, in addition to these mussels, using Doux South’s line of products.
1/2 cup (1 stick) butter
5 garlic cloves, minced
3/4 cup Doux South diced Mean Green Tomatoes
1/2 cup sliced green onions
1/2 cup thinly sliced celery
6 1/4-inch-thick slices jalapeño with seeds
1/4 cup tequila
2 Tbsp. fresh lime juice
1 1/4 lbs. mussels (about 40), scrubbed, de-bearded
Melt butter in a heavy large pot over medium-high heat. Add garlic and sauté until fragrant, about 1 minute. Mix in Doux South Green Tomatoes, and then next five ingredients.
Add mussels. Cover and steam until mussels open, about 7 minutes (discard any mussels that do not open). Using slotted spoon, transfer mussels to large bowl. Simmer sauce uncovered until slightly reduced, about 3 minutes.
Season with salt and pepper. Pour sauce over mussels and serve with toasted bread.
